Isomalt Crystals. Isomalt is used to make hard candy and pulled-sugar items. It is a a product manufactured from beets and is a sugar substitute. Unlike sugar however it mantains its clear/transparency at high heat which makes it perfect for making your own sugar diamonds and other similar items.
Isomalt crystals are higly resistant to humidity and will not crystalise. If no colour is added, the candy will harden clear. To colour isomalt crystal candy, add gel colouring.
Size 400g.
Instructions: Boil in saucepan at 110 degrees, add colour (if needed) then boil to 140 degrees.
